Ingredients:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 teaspoon sugar
  • 1 cup warm water (110°F / 45°C)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil, plus more for drizzling
  • 1 cup shredded cheddar cheese
  • 2-3 jalapeños, sliced thinly
  • Coarse sea salt, for sprinkling
  • Fresh herbs (such as rosemary or thyme), for garnish (optional)

Instructions:

  1. Preparation:
    • In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes, or until it becomes frothy.
  2. Making the Dough:
    • In a large bowl, combine the flour and salt.
    • Add the yeast mixture and olive oil to the flour. Mix until a soft dough forms.
    • Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.
    • Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  3. Forming the Focaccia:
    • Preheat your oven to 425°F (220°C).
    • Punch down the risen dough and transfer it to a lightly greased baking sheet or a baking pan.
    • Using your fingers, gently stretch and press the dough to fit the pan, creating dimples in the surface.
  4. Adding Toppings:
    • Drizzle the top of the dough with a bit of olive oil.
    • Sprinkle the shredded cheddar cheese evenly over the surface.
    • Arrange the sliced jalapeños on top of the cheese.
    • Sprinkle with coarse sea salt and fresh herbs, if using.
  5. Baking:
    • Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and the cheese is bubbly.
  6. Finishing:
    • Remove the focaccia from the oven and let it cool slightly before slicing and serving.
