  • 1 lb ground beef (or turkey/chicken)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 (15 oz) can black beans, drained
  • 1 cup corn (fresh, canned, or frozen)
  • 1 (10 oz) can diced tomatoes with green chiles (Rotel)
  • 1/2 cup water or beef broth
  • 3 cups tortilla chips, lightly crushed
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • Toppings: Sour cream, diced avocado, jalapeños, cilantro, salsa

👩🍳 Instructions

1️⃣ Cook the meat: Brown beef in a skillet over medium heat. Drain fat, then stir in taco seasoning, beans, corn, tomatoes, and water. Simmer 5 mins.
2️⃣ Layer in a casserole dish:
