Chicken Hashbrown Casserole

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1 (30 oz) bag frozen hashbrowns (thawed)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional for topping)
  • 2 tablespoons melted butter (optional for topping)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the cooked chicken, thawed hashbrowns, cream of chicken soup, sour cream, 1/2 cup of the shredded cheese, milk, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  3. Transfer to Baking Dish:
    • Pour the mixture into a greased 9×13 inch baking dish and spread it evenly.
  4. Add Topping:
    • If using, combine the crushed cornflakes with melted butter and sprinkle evenly over the casserole. This adds a nice crunch!
  5. Bake:
    • Bake in the preheated oven for about 45-55 minutes, or until the casserole is hot and bubbly, and the top is golden brown.
  6. Add Remaining Cheese:
    • In the last 10 minutes of baking, sprinkle the remaining cheese on top and return to the oven until melted.
  7. Serve:
    • Let it cool for a few minutes before serving. Enjoy your delicious chicken hashbrown casserole!
