Ingredients:

For the Oreo Layer:

  • 1 package (14.3 oz) Oreo cookies (about 36 cookies)
  • 1/4 cup unsalted butter, melted

For the Caramel Layer:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup brown sugar, packed
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Layer:

  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Instructions:

1. Prepare the Oreo Base:

  • Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper for easy removal.
  • Place the Oreos in a food processor and pulse until finely crushed (or place them in a ziplock bag and crush them with a rolling pin).
  • In a bowl, combine the crushed Oreos with the melted butter, mixing well until the crumbs are coated with butter.
  • Press the Oreo mixture firmly into the bottom of the prepared baking dish to create an even base.
  • Bake in the preheated oven for 8-10 minutes, then remove and let it cool while you prepare the caramel layer.

2. Make the Caramel Layer:

  • In a medium saucepan, melt the butter over medium heat.
  • Add the brown sugar, heavy cream, and salt, and stir to combine. Bring the mixture to a boil while stirring constantly.
  • Once boiling, reduce the heat and simmer for 3-4 minutes, stirring occasionally, until the caramel thickens slightly.
  • Remove from heat and stir in the vanilla extract.
  • Pour the caramel mixture evenly over the cooled Oreo crust. Use a spatula to spread it into an even layer.
  • Let it cool to room temperature for about 15-20 minutes.

3. Make the Chocolate Layer:

  • In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  • Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula.

4. Chill the Bars:

  • Refrigerate the bars for at least 2 hours or until the chocolate is firm and the layers have set completely.

5. Slice and Serve:

  • Once the bars are fully chilled and set, slice them into squares or rectangles, depending on your preference.
