Cinnamon Raisin Bread Pudding

Ingredients

For the Pudding:

  • 6 cups stale cinnamon raisin bread, cubed (or regular bread + 1 tsp cinnamon)
  • 2 cups whole milk (or half-and-half for richness)
  • 3 large eggs
  • ½ cup brown sugar (or maple syrup)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup raisins (or dried cranberries)
  • 2 tbsp butter, melted (for greasing)

For the Vanilla Sauce (Optional):

  • 1 cup heavy cream
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tbsp butter

Instructions

1. Prep the Bread

  • Grease a 9×9-inch baking dish with butter.
  • Spread bread cubes evenly in the dish. Sprinkle raisins on top.

2. Make the Custard

  • In a bowl, whisk milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  • Pour over the bread, pressing down gently to soak. Let sit 15 mins (or refrigerate overnight).

3. Bake

  • Preheat oven to 350°F (175°C).
  • Bake 40-45 mins until golden and set (center should barely jiggle).

4. Vanilla Sauce (Optional)

  • Heat cream, sugar, and butter in a saucepan until simmering. Remove from heat, stir in vanilla, and drizzle over warm pudding.

5. Serve

  • Enjoy warm with whipped cream, ice cream, or extra cinnamon!
