Classic Carrot Cake Recipe

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots (about 4-5 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (if needed)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

2. Prepare the Cake Batter:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, combine the oil, eggs, grated carrots, crushed pineapple, walnuts (if using), and vanilla extract. Mix well.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

3. Bake the Cakes:

  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.

4. Make the Cream Cheese Frosting:

  • In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  • Gradually add the powdered sugar, mixing until fully incorporated. Stir in the vanilla extract. If the frosting is too thick, add a tablespoon of milk to reach your desired consistency.

5. Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting on top.
  • Place the second layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.

6. Garnish and Serve:

  • Optional: Garnish with additional chopped walnuts or pecans on top.
  • Slice and enjoy!
