1. Prep & Cream Butter/Sugar

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a stand mixer, beat butter and sugar on high for 5-7 mins until pale and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. Mix in vanilla.

2. Add Dry Ingredients

  1. Gently fold in flour and salt by hand (overmixing = dense cake).

3. Bake

  1. Pour batter into prepared pan; smooth top.
  2. Sprinkle ¼ cup sugar evenly over the top (this creates the crispy crust!).

  1. Let cool 20 mins in the pan, then remove the ring.
