1. Piccadilly-Style Carrot Soufflé

A sweet and creamy side dish that’s a fan favorite!

Ingredients

  • 1 lb (450g) carrots, peeled and chopped
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60g) butter, melted
  • 2 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • Pinch of salt

Instructions

  1. Boil carrots until soft, then drain and mash until smooth.
  2. In a blender or food processor, combine mashed carrots, sugar, butter, flour, baking powder, vanilla, eggs, and salt. Blend until creamy.
  3. Pour into a greased baking dish and bake at 350°F (175°C) for 40-50 minutes or until set.

2. Southern Fried Chicken

A crispy, golden classic.

Ingredients

  • 4-6 chicken pieces (drumsticks, thighs, etc.)
  • 2 cups (480ml) buttermilk
  • 2 cups (250g) all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Vegetable oil for frying

Instructions

  1. Soak chicken pieces in buttermilk for at least 1 hour or overnight.
  2. Combine flour, salt, pepper, paprika, and garlic powder in a shallow dish.
  3. Heat oil in a deep skillet to 350°F (175°C).
  4. Dredge chicken in the seasoned flour, pressing to coat well.
  5. Fry chicken pieces until golden and cooked through (165°F/74°C internal temp).

3. Piccadilly Mac and Cheese

Creamy, cheesy, and perfectly Southern.

Ingredients

  • 8 oz (225g) elbow macaroni, cooked and drained
  • 2 cups (480ml) milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups (200g) shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
  2. Gradually whisk in milk and cook until thickened.
  3. Stir in cheese until melted. Season with salt and pepper.
  4. Combine cheese sauce with cooked macaroni. Serve warm.
