Yay! Cowgirl Cookies are the ultimate hearty, sweet, and slightly salty treats—packed with oats, chocolate, coconut, and pecans (or your favorite nuts). They’re rugged, indulgent, and perfect for snacking on the go (or with a big glass of milk). Here’s a tried-and-true recipe with a cowboy-approved twist!

Cowgirl Cookies

Makes about 24 large cookies

Ingredients:

  • 1 cup (2 sticks) butter, softened

  • 1 cup brown sugar, packed

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

  • 2 cups old-fashioned oats

  • 1 cup shredded coconut (sweetened or unsweetened)

  • 1 cup chopped pecans (or walnuts)

  • 1 cup semisweet chocolate chips

  • ½ cup white chocolate chips (optional, but fun!)

  • ½ cup toffee bits (or crushed pretzels for salty crunch)

Directions:

  1. Prep: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream butter & sugars: Beat butter, brown sugar, and granulated sugar until fluffy (2-3 mins). Add eggs one at a time, then vanilla.

  3. Dry ingredients: In a separate bowl, whisk flour, baking soda, baking powder, and salt. Gradually mix into wet ingredients.

  4. Mix-ins: Stir in oats, coconut, pecans, chocolate chips, white chocolate, and toffee bits. The dough will be thick!

  5. Scoop & bake: Drop ¼-cup mounds of dough (or use an ice cream scoop) onto sheets, spacing 2″ apart. Flatten slightly.

  6. Bake 12-14 mins until edges are golden but centers are soft. Cool 5 mins on sheet, then transfer to a rack.

Cowgirl Tips:

  • Spice it up: Add 1 tsp cinnamon or a pinch of cayenne for a kick!

  • Salty-sweet: Sprinkle with flaky sea salt right after baking.

  • Go big: For “Texas-sized” cookies, use ½-cup dough and bake longer (18-20 mins).

  • Storage: Keeps in an airtight container for 5 days (or freeze dough balls for fresh cookies anytime).

These are ridiculously customizable—swap in dried cherries, peanut butter chips, or even crushed cornflakes for texture. Perfect for gifting in a mason jar with a bandana tied around it! 🤠
