🍤 Creamy Garlic Parmesan Shrimp & Spinach

(Serves 4)

Ingredients

  • 1 lb (450g) large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup (240ml) heavy cream (or half-and-half for lighter version)
  • ½ cup (50g) grated Parmesan cheese
  • 2 cups (60g) fresh spinach, packed
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

1️⃣ Sear Shrimp:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt and pepper, then cook 1-2 minutes per side until pink. Remove and set aside.

2️⃣ Make the Sauce:

  • In the same skillet, sauté garlic for 30 seconds until fragrant.
  • Pour in heavy cream, Italian seasoning, and red pepper flakes. Simmer 2-3 minutes until slightly thickened.
  • Stir in Parmesan cheese until melted.

3️⃣ Combine:

  • Add spinach and cook until wilted (1-2 minutes).
  • Return shrimp to the skillet, toss in sauce, and finish with lemon juice.

4️⃣ Serve:

  • Garnish with fresh parsley and extra Parmesan.
  • Pair with:
    • 🍝 Pasta (toss with fettuccine or linguine)
    • 🍚 Risotto or crusty bread for soaking up sauce
    • 🥗 Salad for a lighter meal
