Creamy Sun-Dried Tomato Shrimp with Spinach Pasta

Ingredients:

  • 8 oz pasta (fettuccine, penne, or linguine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes (oil-packed, chopped)
  • 1 cup fresh spinach (or baby spinach)
  • 1 cup heavy cream (or half-and-half for lighter option)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for heat)
  • Salt & black pepper to taste
  • Fresh basil or parsley, for garnish

Instructions:

1️⃣ Cook the pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.

2️⃣ Sauté the shrimp:

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt and pepper, then cook for 1-2 minutes per side until pink. Remove and set aside.

3️⃣ Make the sauce:

  • In the same skillet, add 1 tbsp olive oil and sauté garlic and sun-dried tomatoes for 1 minute.
  • Stir in spinach and cook until wilted (~1 min).
  • Pour in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes until slightly thickened.

4️⃣ Combine everything:

  • Add the cooked pasta and shrimp to the sauce, tossing to coat. If needed, add a splash of reserved pasta water to loosen the sauce.
  • Adjust seasoning with salt & pepper.

5️⃣ Garnish & serve:

  • Top with extra Parmesan, fresh basil or parsley, and a drizzle of sun-dried tomato oil (if using oil-packed tomatoes).
