Crispy Baked Garlic Parmesan Potato Wedges 🥔🧄🧀

Ingredients

  • 4 large russet potatoes, scrubbed and cut into wedges
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for serving)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • Fresh parsley, chopped (for garnish)
  • Ranch or marinara sauce (for dipping, optional)

Instructions

  1. Prep the Potatoes:
    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Cut potatoes into ½-inch wedges (leave skins on for crispiness). Soak in cold water for 10 mins, then pat very dry (key for crispiness!).
  2. Season the Wedges:
    • In a large bowl, toss dried wedges with olive oil, minced garlic, Parmesan, Italian seasoning, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Bake to Perfection:
    • Arrange wedges in a single layer on the baking sheet (don’t overcrowd!).
    • Bake for 20 mins, flip, then bake 15-20 mins more until golden and crispy.
  4. Serve:
    • Sprinkle with extra Parmesan and parsley. Serve hot with dipping sauces.

  • Add Heat: Toss with ½ tsp cayenne pepper or chili flakes.
