Ingredients:

  • 2 cups frozen shredded hash browns, thawed and patted dry
  • 1/2 lb breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray.
  2. Prepare Hash Brown Mixture: In a large mixing bowl, combine the shredded hash browns, cooked and crumbled sausage, shredded cheddar cheese, and chopped green onions. Mix until well combined.
  3. Add Wet Ingredients: In a separate small bowl, whisk together the sour cream, eggs, garlic powder, onion powder, salt, and black pepper. Pour this mixture over the hash brown mixture and stir until everything is evenly coated.
