Crustless Coconut Pie Recipe

A simple, delicious, and lightly sweet dessert with a custard-like texture and rich coconut flavor—no crust needed!

Ingredients:

  • 1 cup shredded coconut (sweetened or unsweetened)

  • ½ cup granulated sugar

  • ½ cup all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • 4 large eggs

  • 1 cup whole milk

  • 1 tsp vanilla extract

  • ¼ cup butter, melted & cooled

Optional Toppings:

  • Whipped cream

  • Toasted coconut flakes


Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or similar baking dish.

  2. Mix dry ingredients: In a bowl, whisk together shredded coconut, sugar, flour, baking powder, and salt.

  3. Blend wet ingredients: In another bowl, beat eggs, then mix in milk, vanilla, and melted butter.

  4. Combine: Pour wet ingredients into dry ingredients and stir until just combined (don’t overmix).

  5. Bake: Pour batter into the greased dish and bake for 35–45 minutes, or until the center is set and the top is golden brown.

  6. Cool & Serve: Let cool slightly before slicing. Serve warm or at room temperature with whipped cream or extra coconut flakes.


Tips:

  • Texture: The pie will be custardy in the center with a slightly crisp top.

  • Variations: Add a pinch of cinnamon or nutmeg for extra warmth.

  • Storage: Keep covered in the fridge for up to 3 days.
