Easy Scotcharoos

🍫 The classic no-bake treat with crispy cereal, peanut butter, and a rich butterscotch-chocolate topping! Ready in 15 minutes.

Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies cereal
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

1. Prep the Pan

  • Line a 9×13″ baking dish with parchment paper or grease lightly.

2. Make the Base

  1. In a saucepan, combine corn syrup and sugar.
  2. Heat over medium, stirring until sugar dissolves (don’t boil).
  3. Remove from heat; stir in peanut butter until smooth.
  4. Fold in cereal until fully coated.

3. Press & Chill

  • Transfer to the pan and press firmly with a greased spatula.
  • Chill 10 minutes while you melt the topping.

4. Add the Topping

  1. Melt chocolate + butterscotch chips together (microwave in 30-sec bursts or double boiler).
  2. Spread over chilled cereal layer.
  3. Let set at room temp (or refrigerate for faster setting).

5. Slice & Serve

  • Cut into squares once topping is firm (about 1 hour).

Tips

✔ For extra crunch: Use chunky peanut butter.
✔ Quick set: Freeze for 15 minutes before slicing.
✔ Storage: Keep in an airtight container for up to 1 week.
