Easy Scotcharoos
🍫 The classic no-bake treat with crispy cereal, peanut butter, and a rich butterscotch-chocolate topping! Ready in 15 minutes.
Ingredients
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 6 cups Rice Krispies cereal
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
1. Prep the Pan
- Line a 9×13″ baking dish with parchment paper or grease lightly.
2. Make the Base
- In a saucepan, combine corn syrup and sugar.
- Heat over medium, stirring until sugar dissolves (don’t boil).
- Remove from heat; stir in peanut butter until smooth.
- Fold in cereal until fully coated.
3. Press & Chill
- Transfer to the pan and press firmly with a greased spatula.
- Chill 10 minutes while you melt the topping.
4. Add the Topping
- Melt chocolate + butterscotch chips together (microwave in 30-sec bursts or double boiler).
- Spread over chilled cereal layer.
- Let set at room temp (or refrigerate for faster setting).
5. Slice & Serve
- Cut into squares once topping is firm (about 1 hour).
