📝 Ingredients

Pistachio Crust:

  • 1 ½ cups (150g) shelled pistachios, unsalted
  • 1 cup (100g) graham cracker crumbs
  • 3 tbsp (45g) granulated sugar
  • ¼ tsp rose water (optional, for floral note)
  • 6 tbsp (85g) melted butter

Cheesecake Filling:

  • 24 oz (680g) cream cheese, room temp
  • 1 cup (120g) powdered sugar
  • 1 ½ cups (360ml) heavy cream, cold
  • 1 tsp vanilla bean paste (or extract)
  • 1 tbsp lemon zest

Raspberry Swirl:

  • 1 cup (120g) fresh/frozen raspberries
  • 2 tbsp (25g) sugar
  • 1 tsp lemon juice

Crunch Topping:

  • ½ cup (50g) chopped pistachios
  • 2 tbsp (15g) freeze-dried raspberries, crushed
  • 1 tbsp edible rose petals (optional)
  • 1 tbsp honey

👩‍🍳 Instructions

1️⃣ Pistachio Crust

  1. Pulse pistachios in a food processor until fine. Mix with graham crumbs, sugar, rose water, and melted butter.
  2. Press into a 9-inch springform pan. Freeze 15 mins.

2️⃣ Raspberry Swirl

  1. Simmer raspberries, sugar, and lemon juice for 5 mins. Strain seeds, cool.

3️⃣ Cheesecake Filling

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Whip heavy cream to stiff peaks, then fold into cream cheese mix with lemon zest.

4️⃣ Assemble

  1. Spread filling over crust. Dollop raspberry sauce and swirl with a knife.
  2. Chill 6+ hours (overnight ideal).

5️⃣ Garnish

  1. Toss pistachios, crushed freeze-dried raspberries, and rose petals with honey. Sprinkle over cheesecake before serving.
