Fluffy Rolls Out of Potatoes

Ingredients:

  • 1 cup mashed potatoes (about 2 medium potatoes, cooked and mashed)
  • 1 cup warm milk (110°F/45°C)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1 large egg
  • 4 to 4 1/2 cups all-purpose flour
  • 2 tablespoons melted butter (for brushing)

Instructions:

  1. Preparation:
    • Cook the potatoes, then peel and mash them until smooth. Measure out 1 cup and let it cool slightly.
    • In a small bowl, combine the warm milk and sugar, then sprinkle the yeast on top. Let it sit for about 5 minutes until it becomes frothy.
  2. Making the Dough:
    • In a large bowl, combine the mashed potatoes, melted butter, salt, and egg. Mix well.
    • Add the yeast mixture to the potato mixture and stir to combine.
    • Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. You may not need all the flour.
    • Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  3. First Rise:
    • Place the dough in a greased bowl, turning it to coat all sides. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Forming the Rolls:
    • Punch down the dough to release the air. Turn it out onto a floured surface and divide it into 12 equal pieces.
    • Shape each piece into a ball and place them in a greased 9×13 inch baking dish or on a baking sheet lined with parchment paper.
  5. Second Rise:
    • Cover the rolls with a towel and let them rise in a warm place for about 30 minutes, or until doubled in size.
  6. Baking:
    • Preheat your oven to 375°F (190°C).
    • Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown.
  7. Finishing:
    • Remove the rolls from the oven and brush the tops with melted butter.
    • Let them cool slightly before serving.
