Fluffy Rolls Out of Potatoes

Ingredients:
- 1 cup mashed potatoes (about 2 medium potatoes, cooked and mashed)
- 1 cup warm milk (110°F/45°C)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 teaspoon salt
- 1 large egg
- 4 to 4 1/2 cups all-purpose flour
- 2 tablespoons melted butter (for brushing)
Instructions:
- Preparation:
- Cook the potatoes, then peel and mash them until smooth. Measure out 1 cup and let it cool slightly.
- In a small bowl, combine the warm milk and sugar, then sprinkle the yeast on top. Let it sit for about 5 minutes until it becomes frothy.
- Making the Dough:
- In a large bowl, combine the mashed potatoes, melted butter, salt, and egg. Mix well.
- Add the yeast mixture to the potato mixture and stir to combine.
- Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. You may not need all the flour.
- Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
- First Rise:
- Place the dough in a greased bowl, turning it to coat all sides. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until doubled in size.
- Forming the Rolls:
- Punch down the dough to release the air. Turn it out onto a floured surface and divide it into 12 equal pieces.
- Shape each piece into a ball and place them in a greased 9×13 inch baking dish or on a baking sheet lined with parchment paper.
- Second Rise:
- Cover the rolls with a towel and let them rise in a warm place for about 30 minutes, or until doubled in size.
- Baking:
- Preheat your oven to 375°F (190°C).
- Bake the rolls in the preheated oven for 18-20 minutes, or until golden brown.
- Finishing:
- Remove the rolls from the oven and brush the tops with melted butter.
- Let them cool slightly before serving.
