☁️ Fluffy Sugar Cookie Cake Bars

Pillowy-soft, buttery, and topped with a dreamy vanilla glaze—like a giant sugar cookie you can slice into squares! Perfect for parties or sweet cravings.


📝 Ingredients

For the Bars:

  • 1 cup (2 sticks / 225g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 2 large eggs, room temp
  • 1 tbsp vanilla extract
  • ½ tsp almond extract (optional, but delicious!)
  • 3 cups (360g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2-3 tbsp milk (or heavy cream)
  • 1 tsp vanilla extract
  • Sprinkles (optional)

👩🍳 Instructions

1. Make the Dough

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. In a bowl, cream butter + sugar until fluffy (~3 mins).
  3. Beat in eggs, vanilla, and almond extract.
  4. Mix in flour, baking powder, and salt until just combined (don’t overmix!).

2. Bake

  • Press dough evenly into the pan (it’ll be thick—use wet hands or a spatula).
  • Bake 18-22 mins until edges are just golden (center should stay soft).

3. Glaze & Decorate

  • Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bars.
  • Add sprinkles immediately (before glaze sets).

✨ Tips

✔ Extra fluffy? Chill dough 30 mins before baking for thicker bars.
✔ No glaze? Dust with powdered sugar or frost with buttercream.
✔ Storage: Keep in an airtight container for 3 days (or freeze unglazed).
