Here’s a soft, fluffy, and foolproof bread recipe perfect for breakfast—tried and tested for years! This dough is versatile and can be used for dinner rolls, loaves, or even sweet buns.

Foolproof Fluffy Breakfast Bread

Prep Time: 15 mins (+1.5 hrs rising) | Cook Time: 25-30 mins | Total Time: ~2 hrs
Makes: 1 large loaf or 12 rolls

Ingredients:

  • 1 cup warm water (200 ml, ~110°F/43°C)
  • 1 tbsp active dry yeast (10g)
  • 4 tsp sugar (16g)
  • ⅓ cup vegetable oil (60ml)
  • 1 cup warm milk (200ml, same temp as water)
  • ½ tsp salt
  • 5 cups all-purpose flour (600g + extra 30-50g for kneading)
  • 100g butter, softened (for brushing)

Instructions:

1️⃣ Activate the yeast:

  • In a large bowl, mix warm water, yeast, and sugar. Let sit for 5-10 mins until foamy.

2️⃣ Make the dough:

  • Add oil, warm milk, and salt to the yeast mixture.
  • Gradually mix in flour, 1 cup at a time, until a shaggy dough forms.
  • Turn onto a floured surface and knead for 8-10 mins until smooth and elastic (add extra flour if sticky).

3️⃣ First rise:

  • Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled.

4️⃣ Shape & second rise:

  • Punch down dough and divide into 12 rolls or shape into a loaf.
  • Place in a greased pan, cover, and rise again for 30 mins.

5️⃣ Bake:

  • Preheat oven to 350°F (180°C).
  • Bake 25-30 mins until golden brown.
  • Brush hot bread with softened butter for a glossy, flavorful crust.

Tips for Success:

✨ Yeast check: If it doesn’t foam, your yeast may be expired or liquid too hot/cold.
✨ Softer crust: Cover bread with a towel after baking to keep it tender.
