Here’s a recipe for Fried Semolina Dough (Sweet Semolina Fritters)! These are crispy on the outside, soft on the inside, and wonderfully sweet. Perfect for dessert or as a snack.
Fried Semolina Dough (Sweet Semolina Fritters)
Ingredients:
-
For the Fritters:
- 2 eggs
- 1 cup natural yogurt
- 1/2 cup sugar (adjust to your taste preference)
- 1/4 tsp salt
- 1 tbsp baking powder (Royal type)
- 1 cup semolina
- 1/2 cup vegetable oil (for frying)
-
For the Syrup (optional but recommended):
- 1 cup sugar
- 1/2 cup water
- 1 tsp lemon juice (optional, for added flavor)
- 1 tsp rose or orange blossom water (optional, for a floral touch)
Instructions:
1. Prepare the Dough:
- In a medium-sized bowl, whisk together the eggs, natural yogurt, sugar, and salt until smooth and well combined.
- Add the semolina and baking powder to the mixture, stirring until you have a thick, smooth batter. The batter should be thick but spoonable. If it’s too thick, you can add a little water or milk to adjust the consistency.
2. Make the Syrup (optional but recommended):
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is dissolved.
- Bring to a simmer and let it cook for about 5 minutes until it thickens slightly.
- Add the lemon juice and rose or orange blossom water if you’re using them, then remove from heat and let the syrup cool to room temperature.
3. Heat the Oil:
- Heat vegetable oil in a deep frying pan over medium-high heat. You’ll need enough oil to submerge the fritters (about 2 inches of oil in the pan).
- To test if the oil is ready, drop a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is hot enough.
4. Fry the Fritters:
- Using two spoons or your hands, drop spoonfuls of the dough into the hot oil. Fry in batches to avoid overcrowding the pan.
- Fry the fritters for 3-5 minutes, turning them occasionally to ensure they cook evenly and become golden brown on all sides.
- Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
5. Serve:
- While the fritters are still warm, you can drizzle them with the cooled syrup. Alternatively, you can sprinkle them with powdered sugar or just serve them plain.
- Serve immediately while they’re warm and crispy on the outside and soft and sweet on the inside!
Tips:
- If you want a thicker or thinner batter, adjust the amount of yogurt slightly, depending on your desired consistency.
- The syrup adds a wonderful sweetness, but you can skip it if you prefer a less sugary dessert.
- These fritters are perfect for sharing at a gathering or as a treat with tea or coffee.
Enjoy your Sweet Semolina Fritters! Let me know how they turn out or if you need any other variations.
