Here’s a recipe for Fried Semolina Dough (Sweet Semolina Fritters)! These are crispy on the outside, soft on the inside, and wonderfully sweet. Perfect for dessert or as a snack.

Fried Semolina Dough (Sweet Semolina Fritters)

Ingredients:

  • For the Fritters:

    • 2 eggs
    • 1 cup natural yogurt
    • 1/2 cup sugar (adjust to your taste preference)
    • 1/4 tsp salt
    • 1 tbsp baking powder (Royal type)
    • 1 cup semolina
    • 1/2 cup vegetable oil (for frying)
  • For the Syrup (optional but recommended):

    • 1 cup sugar
    • 1/2 cup water
    • 1 tsp lemon juice (optional, for added flavor)
    • 1 tsp rose or orange blossom water (optional, for a floral touch)

Instructions:

1. Prepare the Dough:

  • In a medium-sized bowl, whisk together the eggs, natural yogurt, sugar, and salt until smooth and well combined.
  • Add the semolina and baking powder to the mixture, stirring until you have a thick, smooth batter. The batter should be thick but spoonable. If it’s too thick, you can add a little water or milk to adjust the consistency.

2. Make the Syrup (optional but recommended):

  • In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is dissolved.
  • Bring to a simmer and let it cook for about 5 minutes until it thickens slightly.
  • Add the lemon juice and rose or orange blossom water if you’re using them, then remove from heat and let the syrup cool to room temperature.

3. Heat the Oil:

  • Heat vegetable oil in a deep frying pan over medium-high heat. You’ll need enough oil to submerge the fritters (about 2 inches of oil in the pan).
  • To test if the oil is ready, drop a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is hot enough.

4. Fry the Fritters:

  • Using two spoons or your hands, drop spoonfuls of the dough into the hot oil. Fry in batches to avoid overcrowding the pan.
  • Fry the fritters for 3-5 minutes, turning them occasionally to ensure they cook evenly and become golden brown on all sides.
  • Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

5. Serve:

  • While the fritters are still warm, you can drizzle them with the cooled syrup. Alternatively, you can sprinkle them with powdered sugar or just serve them plain.
  • Serve immediately while they’re warm and crispy on the outside and soft and sweet on the inside!

Tips:

  • If you want a thicker or thinner batter, adjust the amount of yogurt slightly, depending on your desired consistency.
  • The syrup adds a wonderful sweetness, but you can skip it if you prefer a less sugary dessert.
  • These fritters are perfect for sharing at a gathering or as a treat with tea or coffee.
