Fully Loaded Breakfast Scramble

A hearty, all-in-one skillet breakfast packed with crispy potatoes, fluffy eggs, melty cheese, and all your favorite toppings!

Ingredients

The Base

  • 4 large eggs

  • 1 tbsp butter or olive oil

  • 1 cup frozen shredded hash browns (or diced cooked potatoes)

  • ¼ cup diced onion

  • ¼ cup diced bell pepper (any color)

  • 1 clove garlic, minced

The Loaded Goodies *(Pick 3-4)*

  • 2 strips bacon, cooked & crumbled

  • ¼ cup cooked breakfast sausage

  • ¼ cup diced ham

  • ¼ cup black beans (drained & rinsed)

  • 2 tbsp diced jalapeños (for heat)

  • ¼ cup cherry tomatoes, halved

The Finishers

  • ½ cup shredded cheddar cheese

  • 1 green onion, sliced

  • 2 tbsp sour cream

  • ¼ avocado, diced

  • Hot sauce or salsa


Instructions

1️⃣ Crisp the Potatoes

  • Heat butter/oil in a large nonstick skillet over medium-high. Add hash browns in an even layer. Cook 4-5 mins undisturbed until golden, then flip and repeat. Season with salt & pepper. Remove and set aside.

2️⃣ Sauté Veggies & Protein

  • In the same skillet, cook onion and bell pepper for 2-3 mins until soft. Add garlic and cook 30 secs until fragrant.

  • Stir in your protein choices (bacon, sausage, ham, or beans) to warm through.

3️⃣ Scramble the Eggs

  • Push everything to one side. Pour in beaten eggs (seasoned with salt & pepper). Let set slightly, then gently fold with a spatula until softly set (~2 mins).

4️⃣ Combine & Melt

  • Return potatoes to the skillet. Add cheese and stir gently until melted.

  • Fold in delicate extras like spinach, tomatoes, or jalapeños just to warm.

5️⃣ Serve Hot

  • Top with avocado, sour cream, green onions, and a dash of hot sauce.

🌱 Vegetarian: Skip meat, add extra beans & veggies.
🔥 Spicy: Use pepper jack cheese + pickled jalapeños.
🥑 California Style: Swap cheese for goat cheese + extra avocado.
