Instructions
1️⃣ Crisp the Potatoes

Heat butter/oil in a large nonstick skillet over medium-high. Add hash browns in an even layer. Cook 4-5 mins undisturbed until golden, then flip and repeat. Season with salt & pepper. Remove and set aside.
2️⃣ Sauté Veggies & Protein

In the same skillet, cook onion and bell pepper for 2-3 mins until soft. Add garlic and cook 30 secs until fragrant.

Stir in your protein choices (bacon, sausage, ham, or beans) to warm through.
3️⃣ Scramble the Eggs

Push everything to one side. Pour in beaten eggs (seasoned with salt & pepper). Let set slightly, then gently fold with a spatula until softly set (~2 mins).
4️⃣ Combine & Melt

Return potatoes to the skillet. Add cheese and stir gently until melted.
