Hawaiian Carrot Pineapple Cake 🥕🍍

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 2 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots (about 3 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (to achieve desired consistency)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Mix the Dry Ingredients:

    • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.
  3. Mix the Wet Ingredients:

    • In another bowl, beat the eggs and vegetable oil together until smooth. Add the grated carrots, crushed pineapple, chopped walnuts or pecans (if using), and vanilla extract, stirring to combine.
  4. Combine Wet and Dry Ingredients:

    • Gradually add the wet mixture to the dry ingredients, stirring until just combined. The batter should be thick and moist.
  5. Bake the Cake:

    • Pour the batter into the prepared baking pan and spread it out evenly.
    • Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  6. Make the Cream Cheese Frosting:

    • While the cake is cooling, make the frosting. In a medium bowl, beat together the cream cheese and butter until smooth and creamy.
    • Gradually add the powdered sugar and continue to beat until smooth. Add the vanilla extract and milk a tablespoon at a time until you reach your desired frosting consistency.
  7. Frost the Cake:

    • Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.
