Heavenly Raspberry Chocolate Mousse Cake

An elegant, decadent dessert with layers of rich chocolate mousse, tangy raspberry coulis, and a silky chocolate ganache—all atop a buttery chocolate crust.


Ingredients

For the Chocolate Crust:

  • 1 ½ cups chocolate cookie crumbs (Oreos or digestives)

  • 6 tbsp butter, melted

  • 1 tbsp sugar (optional)

For the Chocolate Mousse Layer:

  • 1 ½ cups dark chocolate (60-70%), finely chopped

  • 1 ½ cups heavy cream, cold

  • 3 large egg whites (pasteurized if concerned about raw eggs)

  • 2 tbsp powdered sugar

For the Raspberry Coulis:

  • 1 ½ cups fresh or frozen raspberries

  • ¼ cup sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch (optional, for thickening)

For the Chocolate Ganache Topping:

  • ½ cup heavy cream

  • ½ cup dark chocolate, chopped

Garnish:

  • Fresh raspberries

  • Chocolate shavings

  • Mint leaves


Instructions

1. Make the Chocolate Crust:

  • Mix cookie crumbs, melted butter, and sugar (if using). Press into the bottom of a 9-inch springform pan.

  • Chill for 15 minutes while you prep the mousse.

2. Make the Chocolate Mousse:

  • Melt chocolate in a double boiler (or microwave in 30-sec bursts). Let cool slightly.

  • Whip 1 cup heavy cream to stiff peaks. Fold into melted chocolate.

  • In another bowl, beat egg whites + powdered sugar to stiff peaks. Gently fold into chocolate mixture.

  • Pour over the crust and smooth the top. Chill 2 hours to set.

3. Make the Raspberry Coulis:

  • Simmer raspberries, sugar, and lemon juice for 5-7 minutes until broken down.

  • Strain through a sieve to remove seeds. Optional: Thicken with cornstarch slurry.

  • Cool completely, then spread over the chilled mousse layer.

4. Add the Ganache Topping:

  • Heat cream until steaming, pour over chopped chocolate, and stir until smooth.

  • Let cool slightly, then pour over the raspberry layer. Tilt the pan to spread evenly.

5. Chill & Serve:

  • Refrigerate for at least 4 hours (or overnight).

  • Garnish with fresh raspberries, chocolate shavings, and mint.
