Homemade Butter Mints

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 tablespoon whipping cream
  • 4 cups powdered sugar, divided (plus more for dusting)
  • 1/2 teaspoon pure peppermint extract
  • Food coloring (optional)

Instructions:

1. Cream the butter:

  • In a large mixing bowl, beat the softened butter with a hand mixer or stand mixer until it’s smooth and creamy.

2. Add the cream and flavoring:

  • Add the whipping cream and peppermint extract to the butter. Mix well until the mixture is smooth and incorporated.

3. Add the powdered sugar:

  • Gradually add 3 1/2 cups of powdered sugar, one cup at a time, mixing well after each addition. The mixture should be thick and pliable but still a little sticky. If the dough is too soft, you can add more powdered sugar (about 1/4 cup at a time) until the consistency is firm enough to shape.

4. Color the mints (optional):

  • If you want to add color, divide the dough into separate portions and add a few drops of food coloring to each portion. Mix well until the color is fully incorporated. You can make them all one color or create a variety of colors!

5. Shape the mints:

  • Lightly dust your hands and work surface with powdered sugar to prevent the dough from sticking.
  • Roll small pieces of dough into balls, then flatten each ball slightly with your fingers. Alternatively, you can roll the dough into small logs and cut them into bite-sized pieces.
  • If you prefer a more uniform shape, you can use a candy mold to create fun, bite-sized mint shapes.

6. Let them set:

  • Place the shaped mints on a parchment-lined baking sheet. Allow them to dry at room temperature for several hours or overnight until they firm up.

7. Serve or store:

  • Once the mints are set, you can dust them with more powdered sugar to keep them from sticking together. Store in an airtight container at room temperature for up to 1-2 weeks.
