Irresistible Magic Lemon Cobbler is a delicious dessert that seems to work a little magic in the oven! The batter forms a crispy, golden crust on top, while the lemony filling creates a gooey, custard-like base underneath. It’s a perfect dessert when you want something sweet and tangy but easy to prepare!

Irresistible Magic Lemon Cobbler

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup whole milk
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1 cup self-rising flour (if you don’t have self-rising flour, see the note below on how to make your own)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or bottled lemon juice (for the custard-like base)
  • Optional: powdered sugar for dusting

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish (or a similar size).
  2. Mix the Batter:
    • In a mixing bowl, combine the granulated sugar, melted butter, milk, lemon juice, lemon zest, self-rising flour, salt, and vanilla extract. Whisk the ingredients together until they’re well combined.
  3. Pour the Batter:
    • Pour the batter into the prepared baking dish. Don’t worry if it looks a little thin — that’s normal!
  4. Add the Lemon Custard Layer:
    • Pour the additional 1/2 cup of lemon juice over the top of the batter. It will seem like the liquid is floating on top, but trust the process! The magic happens in the oven.
  5. Bake:
    • Bake for about 35-45 minutes, or until the cobbler is golden brown and bubbly. You’ll know it’s done when the top is set and slightly crispy, but there’s still a custardy filling underneath.
  6. Cool & Serve:
    • Let the cobbler cool for a few minutes before serving. Optionally, dust with powdered sugar for a pretty touch. It’s great on its own, or you can serve it with a scoop of vanilla ice cream or a dollop of whipped cream.

Note on Self-Rising Flour:

If you don’t have self-rising flour, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to 1 cup of all-purpose flour. Mix well before using in the recipe.
