🍯 Irresistible Yogurt-Filled Granola Cups

(Makes 12 cups)

Crunchy oat cups filled with creamy yogurt and jewel-like berries – perfect for breakfast, snacks, or dessert!


🍽 INGREDIENTS

For the Granola Cups:

  • 2 cups rolled oats (not instant)
  • ½ cup almond flour (or oat flour)
  • ¼ cup honey or maple syrup
  • ¼ cup almond butter (or peanut butter)
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of salt

For the Filling:

  • 1½ cups Greek yogurt (or coconut yogurt for vegan)
  • 1 tbsp honey or agave
  • 1 tsp lemon zest
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Optional toppings:
    • Chia seeds
    • Toasted coconut flakes
    • Dark chocolate drizzle

📝 INSTRUCTIONS

1. MAKE THE CUPS:

  • Preheat oven to 325°F (160°C). Grease a 12-cup muffin tin very well or use silicone molds.
  • In a bowl, mix oats, almond flour, cinnamon, and salt.
  • In another bowl, whisk honey, almond butter, coconut oil, and vanilla until smooth. Pour over dry ingredients and mix until fully coated.

2. SHAPE & BAKE:

  • Press 2 tbsp mixture into each muffin cup, forming a cup shape with your fingers (go up the sides!).
  • Bake for 18-20 mins until golden. Let cool completely in the tin (they’ll crisp up as they cool).

3. FILL & SERVE:

  • Whisk yogurt with honey and lemon zest. Spoon into cooled cups.
  • Top with berries and optional toppings.

4. STORAGE:

  • Keep unfilled cups airtight for 1 week. Fill with yogurt just before serving to prevent sogginess.
