Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon, crumbled (about 4-5 slices)
  • 1/4 cup green onions, finely chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Optional: Fresh parsley or chives for garnish

Instructions:

  1. Prepare the Bacon: Cook the bacon until crispy, then chop or crumble it into small pieces. Set it aside to cool.

  2. Mix the Ingredients: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until everything is evenly combined.

  3. Form the Mini Cheese Balls: Scoop out a tablespoon of the cheese mixture and roll it into a ball. Repeat the process until all the mixture is used. You should get about 12-16 mini cheese balls, depending on the size.

  4. Optional Garnish: If you like, you can roll the cheese balls in chopped fresh parsley or chives for extra flavor and color.

  5. Chill: Place the mini cheese balls on a plate or tray and chill them in the fridge for about 30 minutes to firm up.

  6. Serve: Enjoy these low-carb bacon cheddar cheese balls as a snack, appetizer, or even as part of a party platter!

Tips:

  • You can also roll the cheese balls in additional crumbled bacon or chopped nuts for extra texture and flavor.
  • To make them spicier, consider adding a little hot sauce or cayenne pepper to the mixture.

Enjoy!
