Here’s a simple and hearty Macaroni Casserole recipe that’s perfect for family dinners or potlucks!

For the Casserole:

  • 2 cups elbow macaroni, uncooked
  • 1 lb ground beef (or ground turkey/chicken for a lighter option)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika (optional, for a smoky flavor)
  • Salt and pepper, to taste
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup breadcrumbs (optional, for a crispy topping)
  • 1 tablespoon butter (to mix with breadcrumbs)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
  2. Cook the Macaroni: Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. Prepare the Meat Sauce:
    • Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon.
    • Add the diced onion and garlic, cooking until softened (about 3-4 minutes).
    • Stir in the diced tomatoes (with their juice), tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5-7 minutes.
  4. Combine the Macaroni and Sauce: In a large bowl, mix the cooked macaroni with the meat sauce. Stir in 1 cup of shredded cheese.
  5. Assemble the Casserole: Transfer the macaroni mixture to the prepared baking dish. Spread evenly. Top with the remaining shredded cheese.
  6. Optional Breadcrumb Topping: If using breadcrumbs, melt the butter in a small bowl, mix with breadcrumbs, and sprinkle over the cheese.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. If you used breadcrumbs, they should be golden brown.
  8. Serve: Remove from the oven and let the casserole cool for a few minutes before serving. Garnish with fresh parsley or basil if desired.

Variations:

  • Add vegetables like spinach, bell peppers, or zucchini to the meat sauce for extra nutrition.
  • Use ground sausage instead of ground beef for a richer flavor.
  • For a creamy twist, mix in 1/2 cup of sour cream or cream cheese before baking.
