Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mango puree (from fresh or canned mangoes)

For the Mango Topping:

  • 1 cup mango puree
  • 1/4 cup water
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch

Optional Garnish:

  • Fresh mango slices
  • Whipped cream

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated.
    • Press the mixture firmly into the bottom of the prepared springform pan.
    • Bake in the preheated oven for 10 minutes. Remove from the oven and let cool while preparing the filling.
  3. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Gradually add the sugar, beating until well combined.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • Stir in the mango puree until fully incorporated.
  4. Bake the Cheesecake:
    • Pour the cheesecake filling over the cooled crust, spreading it evenly.
    • Bake in the preheated oven for 50-60 minutes, or until the center is almost set (it should still jiggle slightly when shaken).
    • Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour to cool slowly.
    • Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. Prepare the Mango Topping:
    • In a small saucepan, combine the mango puree, water, sugar, and cornstarch.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
    • Remove from heat and let cool completely.
  6. Assemble the Cheesecake:
    • Once the cheesecake is fully chilled, remove it from the springform pan and transfer to a serving plate.
    • Spread the cooled mango topping over the top of the cheesecake.
  7. Garnish and Serve:
    • Garnish with fresh mango slices and whipped cream if desired.
    • Slice and serve your delicious Mango Cheesecake!
