Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 24 oz (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup mango puree (from fresh or canned mangoes)
For the Mango Topping:
- 1 cup mango puree
- 1/4 cup water
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
Optional Garnish:
- Fresh mango slices
- Whipped cream
Instructions
- Preheat the Oven:
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated.
- Press the mixture firmly into the bottom of the prepared springform pan.
- Bake in the preheated oven for 10 minutes. Remove from the oven and let cool while preparing the filling.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sugar, beating until well combined.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Stir in the mango puree until fully incorporated.
- Bake the Cheesecake:
- Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Bake in the preheated oven for 50-60 minutes, or until the center is almost set (it should still jiggle slightly when shaken).
- Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour to cool slowly.
- Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the Mango Topping:
- In a small saucepan, combine the mango puree, water, sugar, and cornstarch.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Remove from heat and let cool completely.
- Assemble the Cheesecake:
- Once the cheesecake is fully chilled, remove it from the springform pan and transfer to a serving plate.
- Spread the cooled mango topping over the top of the cheesecake.
- Garnish and Serve:
- Garnish with fresh mango slices and whipped cream if desired.
- Slice and serve your delicious Mango Cheesecake!
