Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (240ml) buttermilk or kefir
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil (for frying)
  • Optional toppings: sour cream, jam, honey, or fresh berries

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, whisk together the buttermilk or kefir, eggs, and sugar until well combined.
    • In a separate bowl, sift together the flour, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The batter should be thick and lumpy.
  2. Heat the Pan:
    • Heat a large skillet or griddle over medium heat and add a small amount of vegetable oil to coat the surface.
  3. Cook the Oladyi:
    • Spoon about 2 tablespoons of batter per pancake onto the skillet, spreading slightly with the back of the spoon to form small, round pancakes.
    • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and cooked through.
    • Repeat with the remaining batter, adding more oil to the skillet as needed.
  4. Serve:
    • Serve the oladyi warm with your favorite toppings, such as sour cream, jam, honey, or fresh berries.
