Old South Coca-Cola Pork Loin

Ingredients:

  • 1/4 cup Soy sauce
  • 1 cup Coca-Cola
  • 1/2 cup Dark brown sugar
  • 2 tablespoons Dijon mustard
  • 3 tablespoons Oil (vegetable or olive oil)
  • 2 tablespoons Worcestershire sauce
  • 1/3 cup Ketchup
  • 2 cloves Garlic, minced
  • 1 (2 to 3-pound) Pork loin roast
  • Salt and pepper, to taste

Instructions:

1. Make the Marinade:
  • In a medium bowl, combine the soy sauce, Coca-Cola, dark brown sugar, Dijon mustard, oil, Worcestershire sauce, ketchup, and minced garlic.
  • Whisk together until the sugar is dissolved and the marinade is smooth.
2. Marinate the Pork Loin:
  • Season the pork loin with salt and pepper on all sides.
  • Place the pork loin in a resealable plastic bag or a shallow dish and pour the marinade over the pork.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to soak into the meat.
3. Preheat the Oven:
  • Preheat the oven to 350°F (175°C).
4. Roast the Pork Loin:
