Parmesan Crusted Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (Panko or regular)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Breading Station:
    • In one bowl, place the flour and season with salt and pepper.
    • In a second bowl, beat the eggs.
    • In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  3. Bread the Chicken:
    • Pat the chicken breasts dry with paper towels. Dip each breast into the flour, shaking off the excess.
    • Next, dip it into the beaten eggs, allowing any excess to drip off.
    • Finally, coat the chicken in the Parmesan breadcrumb mixture, pressing gently to adhere.
  4. Bake the Chicken:
    • Place the breaded chicken on the prepared baking sheet. Drizzle with olive oil.
    • Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the crust is golden brown.
  5. Serve:
    • Let the chicken rest for a few minutes before slicing. Garnish with fresh parsley if desired.

Tips:

  • For extra flavor, you can add herbs like oregano or thyme to the breadcrumb mixture.
  • Serve with a side salad, pasta, or steamed vegetables for a complete meal.
