  • 1 pound breakfast sausage (Pork sausage is typically used)
  • 1/4 cup all-purpose flour
  • 3 cups whole milk (you can adjust for desired thickness)
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for some heat
  • Biscuits (store-bought or homemade) for serving

Instructions:

  1. Cook the sausage: In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it up into small pieces as it cooks.

  2. Make the gravy: Once the sausage is cooked, leave some of the rendered fat in the pan. Add the flour and stir well to combine with the fat and sausage, forming a roux. Cook this for about 1-2 minutes to eliminate the raw flour taste.

  3. Add the milk: Slowly add the milk to the skillet, stirring constantly to ensure there are no lumps. Continue to cook and stir until the gravy thickens, about 5-7 minutes.

  4. Season: Season the gravy with salt, pepper, and optional red pepper flakes. Taste and adjust the seasoning as needed.

  5. Serve: Spoon the sausage gravy over freshly baked biscuits and enjoy!

    I make my own gravy, I haven’t had any problems or complaints yet, I am 77 years old. Good gravy is hard to come by. I love gravy and biscuits.
