Quick and Easy Pan-Fried Corn Fritters

Ingredients:

  • 1 can (15 oz) sweet corn kernels, drained (or 1 1/2 cups fresh or frozen corn)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 large egg
  • 1/4 cup milk (or buttermilk for extra richness)
  • 2 tablespoons chopped green onions (optional)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons butter or oil for frying

Instructions:

1. Prepare the Fritter Batter:

  • In a medium mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, and garlic powder (if using).
  • Add the egg and milk, and stir until well combined into a thick batter.
  • Fold in the drained corn kernels, green onions, and parsley (if using). Mix until evenly distributed.

2. Heat the Pan:

  • Heat a large skillet or frying pan over medium heat and add 1 tablespoon of butter or oil. Let it melt and coat the bottom of the pan.

3. Cook the Fritters:

  • Once the pan is hot, spoon about 2 tablespoons of batter into the skillet for each fritter. Flatten them slightly with the back of the spoon to form small, thick patties.
  • Fry the fritters for about 2-3 minutes on each side or until they are golden brown and crispy. You can cook them in batches if necessary.

4. Drain and Serve:

  • Once the fritters are done, transfer them to a plate lined with paper towels to drain any excess oil.
  • Serve the fritters warm with a dipping sauce like ranch, sour cream, or even a spicy aioli.

Tips:

  • Add-Ins: You can also add diced jalapeños, cheese, or bacon bits for more flavor.
  • Make it Spicy: Add some cayenne pepper or hot sauce to the batter for a spicy kick.
  • Leftovers: Store any leftover fritters in the fridge and reheat them in a hot skillet for crispy results.
