Shredded Chicken Gravy on Mashed Potatoes Recipe

Ingredients:

For the Shredded Chicken:

  • 2 cups cooked chicken (shredded, rotisserie chicken works great)
  • 1 tablespoon olive oil or butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for cornstarch slurry)

For the Mashed Potatoes:

  • 2 pounds potatoes (Yukon Gold or Russet), peeled and cubed
  • 1/2 cup milk (more if needed)
  • 1/4 cup unsalted butter
  • Salt and pepper, to taste

Instructions:

1. Prepare the Mashed Potatoes:

  • Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
  • Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

2. Make the Chicken Gravy:

  • In a skillet, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  • Add the shredded chicken, chicken broth, thyme, rosemary, salt, and pepper. Bring to a simmer.

3. Thicken the Gravy (Optional):

  • If you prefer a thicker gravy, mix the cornstarch with water to create a slurry. Stir it into the chicken mixture and cook for a few minutes until the gravy thickens.

4. Serve:

  • Spoon the mashed potatoes onto plates and top with the shredded chicken gravy.
