Shrimp and Crab Seafood Bisque

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 lb crab meat, picked over for shells
  • 4 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood or chicken stock
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup dry white wine
  • 1/4 cup tomato paste
  • 1 tsp Old Bay seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Seafood: If not already done, peel and devein the shrimp. Pick over the crab meat to remove any shells. Set aside.
  2. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and celery and sauté until soft, about 5 minutes. Add the garlic and cook for another 1-2 minutes until fragrant.
  3. Make the Roux: Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook the mixture for about 2 minutes, stirring constantly, until the flour is lightly browned.
  4. Add Liquids: Slowly whisk in the seafood or chicken stock until smooth. Add the heavy cream, whole milk, and white wine. Stir in the tomato paste until well combined.
  5. Season and Simmer: Add the Old Bay seasoning, paprika, cayenne pepper (if using), salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally, until the bisque has thickened slightly.
  6. Add Seafood: Add the shrimp and crab meat to the pot. Simmer for another 5-7 minutes, or until the shrimp are pink and opaque and the crab is heated through.
  7. Adjust Seasoning: Taste the bisque and adjust seasoning if necessary.
  8. Serve: Ladle the bisque into bowls and garnish with fresh chopped parsley. Serve hot.
