Ingredients:

For the Dough:

  • 1 cup active sourdough starter
  • 1 cup warm water
  • 2 cups bread flour
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional, for a touch of sweetness)
  • 1 teaspoon cinnamon (optional, for holiday flavor)
  • 1 cup walnuts, chopped (toasted for extra flavor, if desired)

Instructions:

1. Prepare the Dough:

  1. Mix Ingredients: In a large bowl, combine the sourdough starter and warm water. Stir to mix. Add the bread flour, all-purpose flour, salt, sugar, and cinnamon (if using). Mix until a rough dough forms.
  2. Knead: Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Alternatively, you can use the stretch and fold method in the bowl.

2. Incorporate the Walnuts:

  • Gently fold in the chopped walnuts, ensuring they are evenly distributed throughout the dough.

3. First Rise:

  • Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 4-6 hours, or until doubled in size.

4. Shape the Loaf:

  1. Turn Out: Once the dough has risen, turn it out onto a floured surface. Gently deflate it and shape it into a round or oval loaf.
  2. Second Rise: Place the shaped dough on a piece of parchment paper or in a greased proofing basket. Cover and let it rise for another 1-2 hours.

5. Preheat the Oven:

  • Preheat your oven to 450°F (230°C). If you have a baking stone, place it in the oven to heat. You can also use a Dutch oven for baking.

6. Bake:

  1. Prepare for Baking: If using a Dutch oven, carefully remove it from the oven and place the dough (on the parchment) inside. Cover with the lid.
  2. Bake: Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  3. If using a baking stone: Place the loaf directly on the stone and steam the oven by placing a pan of hot water at the bottom.

7. Cool:

  • Allow the bread to cool on a wire rack before slicing.
