Here’s a delicious recipe for a sourdough cinnamon sugar loaf that’s sure to be a hit! This loaf has a lovely tang from the sourdough and is beautifully swirled with cinnamon sugar.

Ingredients:

For the Dough:

  • 1 cup active sourdough starter
  • 1/2 cup warm milk (or water)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder

For the Cinnamon Sugar Filling:

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened

Instructions:

1. Prepare the Dough:

  1. In a large bowl, combine the sourdough starter, warm milk, sugar, melted butter, and egg. Mix until well combined.
  2. In a separate bowl, whisk together the flour, salt, cinnamon, and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.

2. Knead the Dough:

  • Turn the dough onto a floured surface and knead for about 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

3. Prepare the Filling:

  • In a small bowl, mix the granulated sugar and ground cinnamon for the filling. Set aside.

4. Shape the Loaf:

  1. Once the dough has risen, punch it down and turn it out onto a floured surface.
  2. Roll the dough into a rectangle (about 12×18 inches).
  3. Spread the softened butter over the dough, then sprinkle the cinnamon sugar mixture evenly on top.

5. Roll and Shape:

  • Starting from one long edge, tightly roll the dough into a log. Pinch the seams to seal, then place the seam side down.

6. Second Rise:

  • Place the rolled dough into a greased loaf pan. Cover and let it rise for another 30-60 minutes, or until puffed.

7. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

8. Bake:

  • Bake the loaf for 30-35 minutes, or until golden brown and cooked through. If the top is browning too quickly, you can cover it loosely with foil.

9. Cool:

  • Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
