Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/4 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk, cold
- 12 mozzarella cheese cubes (about 1 inch each)
- 1 tbsp melted butter
- 1 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Biscuit Dough:
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the cold buttermilk and stir until just combined. Do not overmix.
- Form the Biscuits:
- Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together.
- Roll the dough out to about 1/2 inch thickness. Use a biscuit cutter or a glass to cut out 12 rounds of dough.
- Add the Mozzarella:
- Place a cube of mozzarella in the center of each dough round.
- Gently fold the edges of the dough over the cheese and pinch to seal, forming a ball.
- Place the biscuit bombs on the prepared baking sheet, seam-side down.
- Bake:
- Brush the tops of the biscuit bombs with melted butter.
- Sprinkle with garlic powder and dried parsley.
- Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
- Serve:
- Remove from the oven and let cool slightly before serving.
- Enjoy warm, while the cheese is still gooey!
