Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold
  • 12 mozzarella cheese cubes (about 1 inch each)
  • 1 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tsp dried parsley

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Biscuit Dough:
    • In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
    • Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Pour in the cold buttermilk and stir until just combined. Do not overmix.
  3. Form the Biscuits:
    • Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together.
    • Roll the dough out to about 1/2 inch thickness. Use a biscuit cutter or a glass to cut out 12 rounds of dough.
  4. Add the Mozzarella:
    • Place a cube of mozzarella in the center of each dough round.
    • Gently fold the edges of the dough over the cheese and pinch to seal, forming a ball.
    • Place the biscuit bombs on the prepared baking sheet, seam-side down.
  5. Bake:
    • Brush the tops of the biscuit bombs with melted butter.
    • Sprinkle with garlic powder and dried parsley.
    • Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
  6. Serve:
    • Remove from the oven and let cool slightly before serving.
    • Enjoy warm, while the cheese is still gooey!
