Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Biscuit Dough:
In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Pour in the cold buttermilk and stir until just combined. Do not overmix.
Form the Biscuits:
Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together.
Roll the dough out to about 1/2 inch thickness. Use a biscuit cutter or a glass to cut out 12 rounds of dough.
Add the Mozzarella:
Place a cube of mozzarella in the center of each dough round.
Gently fold the edges of the dough over the cheese and pinch to seal, forming a ball.
Place the biscuit bombs on the prepared baking sheet, seam-side down.
Bake:
Brush the tops of the biscuit bombs with melted butter.
Sprinkle with garlic powder and dried parsley.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
Serve:
Remove from the oven and let cool slightly before serving.
