Spicy Noodles with Seared Kielbasa, Shrimp, and Soft-Boiled Egg

Ingredients:

For the Noodles and Sauce:

  • 8 oz ramen noodles or any noodles of your choice (egg noodles, soba, or udon work too)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1-2 tbsp sriracha (adjust based on how spicy you like it)
  • 1 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tsp brown sugar or honey
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/4 tsp chili flakes (optional for extra heat)
  • 1 tbsp sesame seeds (optional, for garnish)

For the Kielbasa and Shrimp:

  • 1/2 lb kielbasa sausage, sliced into 1/4-inch thick rounds
  • 1/2 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 tbsp soy sauce (for marinating shrimp)

For the Soft-Boiled Egg:

  • 2 large eggs

Garnishes (optional):

  • Fresh cilantro or green onions (chopped)
  • Lime wedges
  • Extra sriracha (if you like it extra spicy)

Instructions:

  1. Prepare the Soft-Boiled Eggs:
    • Bring a small pot of water to a gentle boil. Gently add the eggs and boil for 6-7 minutes (for soft yolks). Once done, remove the eggs and transfer them to a bowl of ice water to stop the cooking process.
    • Once cool, peel the eggs carefully. Set aside.
  2. Prepare the Noodles:
    • Cook the noodles according to the package instructions (usually about 4-5 minutes). Once cooked, drain and set aside.
    • In a small bowl, whisk together soy sauce, rice vinegar, sriracha, sesame oil, hoisin sauce, brown sugar, garlic powder, ground ginger, and chili flakes (if using). Set the sauce aside.
  3. Cook the Kielbasa and Shrimp:
    • Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat.
    • Add the sliced kielbasa and sear until it gets crispy and browned, about 3-4 minutes. Remove from the pan and set aside.
    • In the same pan, add the shrimp. Season with smoked paprika, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp turns pink and opaque. Drizzle with a little soy sauce to enhance flavor. Remove from the pan and set aside.
  4. Assemble the Dish:
    • In the same skillet, add the sauce you prepared earlier and cook for 1-2 minutes to slightly thicken and coat the pan.
    • Add the cooked noodles to the skillet and toss them in the sauce until well-coated and heated through.
  5. Serve:
    • Divide the spicy noodles into bowls. Top with seared kielbasa, shrimp, and the soft-boiled egg (sliced in half to reveal the runny yolk).
    • Garnish with fresh cilantro or green onions, a sprinkle of sesame seeds, and a drizzle of extra sriracha if you like it spicier. Serve with lime wedges for an extra burst of freshness.

  • Soft-boiled egg: For the perfect soft-boiled egg, make sure to time it precisely. If you prefer a firmer yolk, you can cook it for 8-9 minutes instead.
