Ingredients:

Steak and Gravy:

  • 2 lbs beef chuck steak, cut into 1-inch cubes
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional, can substitute with more beef broth)
  • 1 tablespoon tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves

Onion Dumplings:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/2 cup finely chopped onion
  • 1/2 cup milk

Instructions:

  1. Prepare Steak and Gravy:
    • Season the beef cubes with salt and pepper, then coat them in flour.
    • In a large, heavy-bottomed pot, heat the olive oil over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove the beef and set it aside.
    • In the same pot, add the chopped onion and cook until softened and beginning to brown, about 5-7 minutes. Add the minced garlic and cook for another minute.
    • Stir in the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, and bay leaves. Bring to a simmer.
    • Return the beef to the pot, cover, and reduce the heat to low. Simmer for 1 1/2 hours, or until the beef is tender.
  2. Prepare Dumplings:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
    • Stir in the chopped onion. Gradually add the milk, stirring just until the dough comes together.
  3. Cook Dumplings:
    • Drop spoonfuls of the dumpling dough onto the simmering stew. Cover the pot and cook for an additional 15-20 minutes, or until the dumplings are cooked through and fluffy.
  4. Serve:
    • Remove the bay leaves from the stew. Serve the beef and gravy with the onion dumplings on top. Garnish with fresh parsley if desired.
