🍓 Strawberry Crunch Cheesecake Chunks Recipe

Ingredients

For the Cheesecake Filling:

  • 16 oz (450g) cream cheese, softened

  • ½ cup (100g) granulated sugar

  • 1 tsp vanilla extract

  • ½ cup (120g) strawberry puree (fresh or frozen strawberries blended)

  • 1 cup (240ml) heavy cream, whipped to stiff peaks

For the Strawberry Crunch Topping:

  • 1 cup (100g) Golden Oreos or shortbread cookies, crushed

  • ½ cup (60g) freeze-dried strawberries, crushed

  • 3 tbsp (45g) melted butter

  • 1-2 tbsp sugar (optional, depending on sweetness preference)

Optional:

  • White chocolate drizzle

  • Extra crushed freeze-dried strawberries for garnish


📝 Instructions

1. Make the Cheesecake Filling

  • In a bowl, beat cream cheese and sugar until smooth.

  • Add vanilla and strawberry puree, mixing until fully combined.

  • Gently fold in the whipped cream until fluffy and well-incorporated.

2. Prepare the Strawberry Crunch

  • Crush Golden Oreos/shortbread cookies and freeze-dried strawberries into fine crumbs.

  • Mix with melted butter (and sugar if using) until it resembles wet sand.

3. Assemble the Cheesecake Chunks

  • Option 1 (Freezer Bars):

    • Line a loaf pan or small tray with parchment paper.

    • Press half the strawberry crunch into the bottom.

    • Spread the cheesecake mixture on top.

    • Sprinkle the remaining crunch over the cheesecake layer.

    • Freeze for 4+ hours, then slice into chunks.

  • Option 2 (Bite-Sized Chunks):

    • Drop spoonfuls of cheesecake mixture onto a parchment-lined tray.

    • Roll or press the strawberry crunch onto each chunk.

    • Freeze for 2 hours until firm.

4. Serve & Enjoy!

  • Keep stored in the freezer (they soften quickly!).
