Strawberry Jello Angel Food Cake 🍓🍰

This Strawberry Jello Angel Food Cake is a light and refreshing dessert that combines the airy texture of angel food cake with the sweet and tangy flavor of strawberry jello. It’s perfect for a summer treat or a festive occasion!

Ingredients:

  • 1 box angel food cake mix (make sure it’s the kind that only requires water)
  • 1 package (3 oz) strawberry jello (or any flavor you prefer)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup heavy cream (for topping)
  • 2 tablespoons powdered sugar (for whipped cream)
  • Fresh strawberries, sliced (for garnish)

Instructions:

1. Prepare the Angel Food Cake:

  • Preheat the oven to 350°F (175°C).
  • Prepare the angel food cake mix according to the package directions (typically just adding water to the cake mix and beating until frothy).
  • Pour the batter into an ungreased tube pan and bake according to the package directions (usually around 35-40 minutes).
  • Once baked, let the cake cool completely upside down to prevent it from collapsing.

2. Prepare the Strawberry Jello:

  • In a medium bowl, dissolve the strawberry jello in 1 cup of boiling water. Stir until completely dissolved.
  • Add 1 cup of cold water to the jello mixture and stir well.
  • Let the jello sit at room temperature for 10-15 minutes to cool slightly. It should be thickening but not set yet.

3. Assemble the Cake:

  • Once the cake has cooled, remove it from the pan and place it on a serving platter.
  • Using a sharp knife, hollow out the center of the cake to create a “well,” leaving about 1-inch border around the sides and bottom of the cake.
  • Pour the cooled strawberry jello mixture into the well, allowing it to soak into the cake. The cake will absorb some of the jello, giving it a delicious strawberry flavor.

4. Whip the Cream:

  • In a chilled mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  • You can use a hand mixer or a stand mixer for this step. Be careful not to overwhip.

5. Serve:

  • Once the jello has set (about 2-3 hours in the fridge), top the cake with the freshly whipped cream.
  • Garnish with sliced fresh strawberries around the cake or in the center.

6. Chill and Enjoy:

  • Refrigerate the cake for about 30 minutes to an hour before serving to let the whipped cream firm up and the flavors meld together.
