Stuffed Cabbage Rolls

Ingredients:

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup cooked rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 cups tomato sauce
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp lemon juice
  • 2 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and gently place the cabbage head in the boiling water. Cook for about 5-7 minutes, until the outer leaves are pliable. Remove the cabbage and let it cool. Carefully peel off 12-14 large leaves, setting them aside.
  2. Prepare Filling: In a large bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, beaten egg, salt, black pepper, and paprika. Mix well until all ingredients are evenly incorporated.
  3. Assemble Rolls: Place a cabbage leaf on a flat surface. Spoon about 1/4 cup of the filling mixture onto the center of the leaf. Fold the sides of the leaf over the filling, then roll up tightly from the stem end. Repeat with remaining leaves and filling.
  4. Prepare Sauce: In a medium saucepan, heat the olive oil over medium heat. Add the tomato sauce, beef broth, brown sugar, lemon juice, and Worcestershire sauce. Stir to combine and bring to a simmer.
  5. Cook Rolls: Preheat your oven to 350°F (175°C). Spread a thin layer of the sauce in the bottom of a large baking dish. Arrange the cabbage rolls seam-side down in the dish. Pour the remaining sauce over the rolls, ensuring they are well covered.
  6. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 15 minutes, or until the cabbage is tender and the filling is cooked through.
  7. Serve: Garnish the stuffed cabbage rolls with fresh chopped parsley before serving.

    Time consuming to make but it’s well worth it. They freeze good and, and another great meal with mashed potatoes and use the sauce as a gravy, with a salad or favorite veggies. Yummy!
