Zero-Point Cabbage Soup

Servings: 6 (about 1½ cups per serving)

Ingredients:

  • 1 small green cabbage, chopped (~6 cups)

  • 1 large onion, diced

  • 3 carrots, sliced

  • 3 celery stalks, chopped

  • 1 bell pepper (any color), diced

  • 4 garlic cloves, minced

  • 1 (14.5 oz) can diced tomatoes (no salt added)

  • 6 cups vegetable broth (fat-free, low sodium)

  • 3 cups water

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper to taste

  • 2 tbsp apple cider vinegar or lemon juice (brightens flavor)

  • Fresh parsley or cilantro for garnish


Instructions:

  1. Sauté veggies: In a large pot, sauté onion, carrots, celery, and bell pepper over medium heat with a splash of broth (or water) for 5 mins until softened.

  2. Add garlic & spices: Stir in garlic, oregano, basil, and red pepper flakes for 1 minute until fragrant.

  3. Simmer soup: Add cabbage, diced tomatoes, broth, and water. Bring to a boil, then reduce heat and simmer 20–25 mins until veggies are tender.

  4. Season & finish: Stir in vinegar/lemon juice, salt, and pepper. Adjust to taste.

  5. Serve hot: Garnish with fresh herbs.

✅ Extra flavor? Add a Parmesan rind while simmering (remove before serving).
✅ More protein? Stir in 1 cup rinsed cannellini beans (still low points!).
