These Authentic Amish Refrigerator Pickles are the perfect combination of crisp, tangy, and refreshing flavors. They’re easy to make and require no canning – just prepare and refrigerate! This recipe gives you a crunchy, flavorful pickle that’s great for snacking or as a side dish.


Ingredients:

  • 6 cups thinly sliced cucumbers (about 4 medium cucumbers)
  • 1 medium onion, thinly sliced
  • 1 ½ cups white vinegar
  • 1 cup granulated sugar
  • 1 tbsp salt

Instructions:

  • Slice the cucumbers thinly, about ¼ inch thick. You can peel them if desired, but leaving the skins on adds extra crunch.
  • Slice the onion thinly as well.

2. Layer the Cucumbers and Onion:

  • In a large mixing bowl or a container with a tight-fitting lid, layer the cucumber slices and onion slices.

3. Make the Pickling Liquid:

  • In a medium saucepan, combine the white vinegar, granulated sugar, and salt.
  • Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar and salt dissolve completely (about 2-3 minutes).
  • Once dissolved, remove from heat and let it cool slightly for a few minutes.

4. Pour the Pickling Liquid:

  • Pour the slightly cooled pickling liquid over the sliced cucumbers and onions. Make sure the cucumbers are completely covered by the liquid. If needed, use a spoon to press the cucumbers down.
