Browned Butter Mashed Potatoes with Garlic & Parmesan
Creamy, nutty, and packed with umami—this is not your average mashed potato recipe.
Ingredients
- 2 lbs Yukon Gold potatoes (peeled & cubed)
- ½ cup unsalted butter (1 stick)
- 4 cloves garlic, minced
- ½ cup heavy cream (or whole milk)
- ½ cup grated Parmesan cheese
- ¼ cup sour cream (optional, for extra richness)
- Salt & black pepper to taste
- Chopped chives (for garnish)
Instructions
1. Brown the Butter:
- Melt butter in a small saucepan over medium heat.
- Swirl constantly until it turns golden-brown and smells nutty (~5 mins).
- Immediately stir in garlic, cook 30 seconds, then remove from heat.
2. Cook Potatoes:
- Boil potatoes in salted water until fork-tender (15–20 mins). Drain well.
3. Mash & Combine:
- Return potatoes to the pot. Mash with cream, sour cream, and Parmesan.
- Pour in the browned butter-garlic mixture and fold gently.
- Season with salt & pepper to taste.
4. Serve:
- Garnish with chives and extra Parmesan.
