Cheesy Breakfast Egg Casserole

Ingredients:

  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 1 cup diced cooked ham, sausage, or bacon
  • 1 cup diced bell peppers (any color)
  • 1 cup diced onions
  • 1 cup frozen hash browns or diced potatoes (optional)
  • Salt and pepper to taste
  • 1 tsp garlic powder (optional)
  • 1 tsp dried oregano or Italian seasoning (optional)
  • Cooking spray or butter for greasing

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
  2. Prepare the Filling: In a large bowl, whisk together the eggs and milk. Add salt, pepper, garlic powder, and oregano. Mix well.
  3. Combine Ingredients: Stir in the shredded cheese, cooked meat, bell peppers, onions, and hash browns (if using). Mix until everything is well combined.
  4. Pour into Baking Dish: Pour the egg mixture into the prepared baking dish, spreading it evenly.
  5. Bake: Bake for 30-35 minutes, or until the casserole is set in the center and the top is golden brown. You can test for doneness by inserting a knife; it should come out clean.
  6. Serve: Let it cool for a few minutes before slicing into squares. Serve warm.
